Chia Seed pudding
Don't you just love the sound of that? Yum! A healthy pudding that can be had for breakfast or as a healthy dessert completely guilt free and nutrient dense. That is the bonus if you ask me. So why are chia seeds so healthy? Well:
They have more potassium than bananas
They have double the antioxidants of blueberries
They contain lots of fibre, calcium, magnesium, iron and Omega 3!
And they contain Niacin, nature's natural anti depressant

These seeds are so versatile as they have no flavor so you can really play around with preparation but the most popular way (and pretty simple) is making these puddings:
INGREDIENTS:
1 C Coconut milk (or any milk you like)
2 tablespoons chia seeds
1/4 C frozen or fresh berries
Flesh of fresh coconut or dried coconut thread
1/2 to 1 teaspoon Vanilla paste or extract
Touch of honey or maple syrup
METHOD:
Best made the night before.
Simmer berries on the stove & add coconut chips and sweetener as berries cook.
Once cooked (looking a bit like jam) turn off the heat and set aside.
Mix the milk, chia seeds and the above mix in a jar and store in the fridge for consumption the next day.
Change it up:
Instead of berries and coconut use a smoothie such as mango smoothie, green smoothie or simple make a date blend to top a plain cinnamon flavored pudding with.
